When I look to join a table it says what options it has for that table but not what those options do
This will vary greatly from game to game and developer to developer.
They can be things like:
-enabling expansions
-official rule variants
-official adjustments for competitive tournament play
-quick setup options
-alternate setup options (like card drafting)
-game length (i.e., points to win/game rounds to play)
And so on.
Sometimes they are described right in the option area.
Sometimes in the rulebook (or an expansion rulebook).
Sometimes on the game page.
Sometimes in the individual game forums.
If you can't find something in the above locations, you're best bet would be asking in the specific game forum.
