Would it be possible to play a single Championship race?

I'd love to be able to split a Championship series up over multiple sessions. My friends and I can only normally play 1 race. With the physical game, we can note down the current state and return to it for the next session. I'd love to be able to do something similar here.

Why not playing it turn-based ? You can still play real-time session of that TB table

But there isn't a way to play the GOAT championship as described in the rulebook?

"GOAT!
Play the 1961, ’62 and ’63 seasons in succession to determine who is the Greatest Of All Time.
At the end of each season all players keep a single Upgrade card of their choice among the ones they have for the next season."

I don't think that option is available here unless I missing something.

Also having the notification symbol flashing indicating your turn can be triggering :O. It can be a long time before you get the group together for the next game and if playing game in the meantime you are encouraged to play your turn-based game. Admittedly I don't play Championship mode too often (mainly for the time reasons) and not sure what the numbers are for playing it at the moment.
