It depends on your definition. I play mostly turn-based so a game can end hours before I actually see that it's ended (and sometimes I miss the end altogether and have to go back a day or two later and find out what happened to that game I was playing). In my opinion, sending a "good game" message at that point is MORE annoying that not sending anything. I've had "good game" messages pop up on games that finished ages ago and I've just found them horribly confusing. So I don't do them if it's been a long time since a game ended (real-time games are obviously a different thing).
Moreover, I personally find saying "good game" on every single game you play feels disingenuous - as you say, it's not hard to click a button twice, so do people really mean it? I say "good game" to people when it really IS a good game, a particularly hard fought or close game with good play that I admire. I find it somewhat hollow when I play someone who completely outplays me, and they say "good game". Maybe they mean it, but I wonder - did they actually enjoy the game when I presented minimal challenge to them? And worse is when I play the same player multiple times in a row, and they just say "good game" after or "good luck have fun" beforehand, as though they didn't notice this is the fourth time in a row we've played. At that point, I do feel like it's just going through the motions and doesn't mean anything - in real life, you'd be unlikely to do that without commenting on the fact.
And yes, when I play real life games, I do typically say good game to the other players at the table, but that I mean what I say (and that they do) can be more easily read in body language from a real life interaction. I usually chat more with real-life players than I do online as well. For me, online is a different beast. And to present the counterpoint to my comment above about someone who doesn't acknowledge the fourth game in a row and just goes through their normal before and after comments, someone had pointed out to me that perhaps they didn't notice we'd played multiple games - in real life, this is much more obvious. Again, online is different. So I try not to judge, but I also do what feels comfortable to me online.
All that is to say, if you feel you should say "Good game" after every game, go right ahead, but don't condemn others for not doing so. They have reasons that may be equally valid, and doesn't mean they are necessarily being rude. If it really bothers you, you can always red thumb those players.
