Why play 3+ people game?

In my observation, Wingspan is a perfect game for 2 ppl, no long wait for your turn, very direct and transparent competition. Yet I find it difficult finding a match for my 2 player table search (non premium member here) and usually see only 3-4 ppl tables open.. why??

More players does alter the dynamics a little, but not much. The pink powers will be triggered more often, and the dice in the bird feeder will change more between your turns.

If you want 2 player, jump into the arena.

There are big differences with 4-5 players - pink powers are activated more often than with 2p, and there's much more competition for round-end bonuses. With 2p, you're guaranteed some round-end points

I like games with more players, as well as two player games. They're more or less the same but there are some fun differences.

In two player it can get frustrating when the feeder just stays the same for several turns in a row because the other player isn't taking food; with 5 players you can almost count on it being a random new set of food. On the flip side, in two player you can often tell when the other player isn't going to draw one of the visible cards, and wait to draw it on your next turn, but with 4 or 5 players you'd better draw that bird you want right now even if it's not an ideal turn to draw. As other commenters said, pink powers can get much much stronger with more players. I remember a 5 player game where two other players had ravens, and I won, in part because I had a kingbird and kingfisher and was getting one or two free food almost every turn.

I pretty much only ever play turn based games. Waiting for more players doesn't make much of a difference. If I have 30 games going, check in the morning and make my moves, and check again in the evening and make my moves, maybe a few games won't have progressed to my turn yet, but most will. And the ones where I didn't have a turn in the evening, I probably will when I check again the next morning.

3+ players is a different (and in my opinion better ) game. So much so I win more 4 player games than I do 2 player , because I practice more 4 player games.

The tray also changes more so bonus cards become marginally better.
