Hey, just wondering if you remove the new university when a player picks it? I know only 1 player can have a specific animal university but I mean if player 1 choose the new university and pick, lets say birds, can another player on the same turn pick, lets say predators, or is the token for the new university removed until the next break?
Also can the same player choose the new university twice for different animals?

Nope, that's precisely why this "generic university" is removed when you take a specialized univ. And no, a player can only take one specialized univ as explained in the rulebook

You can if you have the upgraded association 1 unique action card, as per the glossary.

This is also an exception if you have upgraded association 1. You take the new university from beside the association board but the generic university stays on board, so the opponent can take a different one during the same round and vice versa.
