Issue is that, your suggestion would take many extra turns. During that time opponent is likely rushing to finish the game. Trashing is great, but if you do not trash in time you will lose.

People keep talking about the train and building layout, but I don't see why it matters. You can stop at any building and do an auxiliary action. After you visit El Paso once you can unlock the trash action, and can just do a trash action at every building. It's 1 turn to get to El Paso because you can start wherever you want, and then 9 actions of trashing after that (to also trash the first Simmental). So that's only 10 turns. A mere 3 turns more than your estimate, and the game is still broken.
if you spend an entire "trip" around the board just trashing, im gonna rush the end and pick up a few points more than you.

I originally thought trashing was going to ruin this game. Until opponents started countering me by not letting me actually capitalize on it.

Do you have any replays of this happening? I've only played a few games, but I don't see how rushing El Paso would counter it. You have to stop to get money, certs and cows, at a minumum, or else you end up with the same 8-value hand, max, every go-round. And if you didn't trash any of your own 1-value cows, you'd be lucky to even hit 8. The only cheapest non-zero repeatable station is requires 12 value. You need a good hand and a lot of certs to hit that reliably. The only one less than 12 that gives you points requires 10, and that's one-use. Unless the other players are stopping to get goals and bonus tiles, and cows, etc, once the trash player starts to "go off" which doesn't even require a 4-cow deck necessarily, they will gain points exponentially.

I'd like to see a replay of a player dedicated to the trash strategy lose to someone not doing it.

The official Appendix from Lookout Spiele now says that a player may not trash more than 5 cows in a game.

Officially:
Each player may remove at most 5 cattle from their deck over the course of the game. For this
purpose, each player should keep a personal discard pile for the cattle they remove from their
deck—to keep track.

The BGA version definitely still allows you to trash more than five.
