it annoys me if the other player won and they don't say gg.

Why wouldn't they think it was good game when the won?
Why wouldn't they want to use a friendly goodbye message?

If you do sign off and you lost, then you get a green-thumb.
If you don't sign off and you won, you get a red-thumb.

I don't know if it's because of the cultural difference with the West because I'm Asian, but in the Eastern Go game, it's a basic courtesy that neither the winner nor the loser of the game express joy or anger.
I don't know if you're saying "gg" because you had fun after the game or if you're saying it's a good game because you won, but I don't see it as a cool sportsmanship.
Maybe you are over thinking, but Win or lose, I try to say "thanks for the game" :)

One time I said gg when I lost and they responded with "not really" 🥴
