I have encountered an increase in opponents who concede. The problem with this action is that Yahtzee is more a game in which one plays against themselves.....attempting to reach the highest score. It's also not a ton of fun to not be able to finish a high scoring game. Can the concede option be deleted for this game?

"Not a ton of fun to be able to finish a high scoring game" is from your perspective. From your opponent's perspective, "being forced to play several rounds of a losing game where the outcome has long been known" isn't a "ton of fun."

This is exactly the kind of game conceding is made for. At some point, it may become mathematically impossible for your opponent to win. They have then conceded, giving you the win that they have earned, and you both get to go on to the next game. You have already won the game, your opponent has acknowledged it. There is no reason they should be forced to sit through the remainder so you can see if you can get a personal best.

If your interest is in your own high score, as you say you players are playing against themselves, I am sure there are places you can play yahtzee that don't involve other players. A quick Google search for "play yahtzee solo" brings up several options.
