Do all games have a concession option, or just some? I was looking for a "concede" selection in a two-player Troyes game and couldn't find one...

You can concede in all games. You just have to click on the "leave game" icon and select "concede the game".

If someone concedes a three-or-more player game, does that end the game? Or do the others somehow continue playing?

Translating Dominion I found two entries about zombie Thieves an zombie Spies.

What does this mean?

Is Dominion going to migrate to The Walking Dominioners?

A zombie is a player controlled by the server because the actual player left the game. Typically the entries you are referring to probably occur when a player played a Thief or a Spy and left the game while these cards were still "active" (the player had still to choose which treasures to steal for example).
