Well, for Kingdomino and Sush Go the 2-player variant is in the rulebook. For Puerto Rico, I'm pretty sure the designer or publisher gave their blessing on it in the BoardGameGeek forums. (I know it was with an interview with him that he mentioned that two buildings should have their prices switched, which gives the "balanced play" variant.)
