You would have to mutually agree to a time with those playing, so when playing with friends it is quite easy. You can create a game with no time limit, then setup times where you all come and play, and if you don't finish it is no big deal, the game will be there to continue when y'all next have time (I believe it is limited to 30 days without a move before the game is closed).

With opponent's you don't know, it may be possible to find agreeable players, but would be fairly difficult. You can change a live game to turn based mode if all players agree, but may find it difficult to make a suitable time for all players to come back and continue the game live.
