Why do we keep trash cards

I don't think that there are real trash cards in the game, some birds are not very usefull to play but you can tuck them or give them away to get extra food... so it depends on you to use the cards you got as well as you can.

A bird that serves only to discard for food is a bad card. At some point, we need to play birds onto our tableau. It's frustrating to draw birds that are generally useless to play.

Great Crested Flycatcher is uterly trash. Of course if you are a classic lucky player like my opponents, its a reliable and convenient food provider. But if you are me, its a rock that does nothing. If you try to use it and it fail (1/6 chance on a new roll, more when your opponents killed the birdfeeder), you lost the game. Gg see you next. This is the only type of card that can fail doing what they are supposed to do. Other random stuff are typically hunting birds, but they give uncapped points so its acceptable to fail. Flycatcher will fail doing is only purpose, you cant rely on it. And once again, its now competing with American Redstart. Im curious to see the winrate of an American Redstart on starting hand. Silly card i dont have in my physical version of the game.

I'm nearly 500 Elo at This game. I have won with the Great Crested Flycatcher as my first forest bird twice in my previous 15-20 games.

Among other things you said:

1) 1/6 is wrong for the probability of a failure on a new roll.
2) There are other birds that can also fail to get food. Are you of the opinion that this is the only bird that requires a specific food from the feeder?
3) The reason some players are rated 500 (or 600 or 700 or 800) and other players are not, is not because of luck. In the short run there is some variance. In the long run, the better players will achieve expert or master status.

4) Yes, the American Redstart is a very strong card. There are other strong cards. Most starting hands do not have a bird that strong. I mean, 1 time out of 36 your opponent has the Redstart. And one time out of 36, you will. On average.
