I am trying to transition from my current job to a technical writer and I think this would be a good place to get experience doing some instructional writing.

I am a teacher in the real world so it's not a jump to tech writer. Let me know, shoot me a DM.

What exactly are you lookling for? You can write a tutorial for any new game - that does not require anybody else.
Alternately you can edit some of our wikis on dev site. Most of it was written by non-native english speakers and in a rough shape.
