Is there a way to see the number of all players who have played a particular game?

Something in substitution of going to a game's "Rankings" and scrolling through hundreds/thousands of pages until you reach the end :?

First of of all, even scrolling that list doesn't tell you the whole number, only those who have played the game in the last 2 or 3 months or so (after that time, you don't lose your ELO, but you don't show in the rankings).

You can search for a group called "X players", where "X" is the name of the game, sometimes with creative spelling. Everyone is added automatically to such a group after playing a game. You can leave the group, but I guess most people don't. Example: https://boardgamearena.com/group?id=1224899

The example link does not work, if you don't have the right to see the group (i.e. your are not a member of that group). In general, you can search for groups at: https://boardgamearena.com/community
