Is this completely random? It seems the game sometimes carries on when there are very few tiles left, and sometimes stops abruptly when there are lots left in the bag. Makes strategy a bit more challenging, but maybe that's deliberate?

Don't hesitate to check the tutorial or read the rules to know them all
The game ends when someone completes a line, that's not random, but we can't know in advance the number of rounds.

It cannot always be predicted, but, in a 2-player game, it is rare for the game to go more than 5 rounds. Someone is completing the top row (an often the second row) after 5 rounds.
