Discard ingredients in a cup

Hello,
I do not know how to discard all ingredients in a cup.
I made a mistake in one cup and wanted to discard all the ingredients in it but the game never gave me that option (at the moment or later) so this cup remained blocked full with useless ingredients during the whole game.

I replayed/reviewed my only game of this. I was on an iPad, in case that makes an interface difference.

Having collected further ingredients on a subsequent turn, when I come to place them in cups under each cup is a blue banner with the word “empty” on it. I can only imagine this empties the current contents.

The rules says a cup has to be emptied entirely. So, unable to just remove one ingredient.
