Is there a way I can host a game for friends, but not actually play in it?

You can ask one of your friends to host the game.

I think you can set up a game, have one of them join, then you leave before the start.

If it's a premium game, the table will be closed as soon as there is no premium player remaining. Unless there's some kind of glitch.
